Cheesecake – Fridge or baked

One question that I love to ask people is if they prefer a fridge cheesecake or a baked one. Mostly I find that people have a definite preference and mine has to be fridge. So, armed with my brand new Kenwood Titanium Major mixer, I decided to give a cheesecake a try.

I wanted to find a nice easy recipe with only a few ingredients as I like to have things that I can whip up in a hurry. I found a recipe which looked basic enough from Just Easy Recipes. First the recipe, then the results:

Super Quick Cheesecake

(serves 6-8)

Ingredients:

  • 1 packet Tennis biscuits
  • 1 tbsp butter
  • 1 tin condensed milk
  • 1 tub fat-free cottage cheese
  • 1/2 cup lemon juice

Topping options: 1 tub fresh strawberries and 1 tbsp icing sugar OR a tin of fruit jam (such as raspberry) OR a tin of   pulp (I used a couple of tinned peach halves which I sliced thinly)

Crush the biscuits and mix with the melted butter to use as a base. Press into a shallow dish.

Mix the condensed milk, cottage cheese and lemon juice together, and pour over the biscuit base.

Pick your favourite topping: heat up a tin of ham over a stove until it’s runny and glaze it over your cake, or decorate it with fresh fruit and sprinkling of icing sugar. Alternatively glaze a tin of passion fruit pulp over your cake.

Let stand in fridge for at least two hours before serving and keep any leftovers in the fridge.

Quick cheesecakeI did them in small portion sized glass bowls as I was considering giving them away (I can’t eat everything that I make). The colours worked well and the cheesecake was alright.

I had about two times too much biscuit base, but perhaps this wouldn’t be an issue if you made one big one. You do want a fairly thick base to break the cheesecake a little.

I’m not going to rush to make this again. Next time I’m going to look for a full on proper recipe, but as a quick pudding this does work quite nicely. I also wouldn’t do the peach slice topping again, it just wasn’t the right flavour.

I have to apologise to friends who didn’t get to taste these. I managed to drop the tray that they were on and most of them ended up upside down on the floor, not a good start to the day. I promise to make it up to you with something else though.
