Silwood Christmas course
I realise that this is a little late seeing as though the course ended in the beginning of December, but it was a fantastic course and I just had to write something on it.
We learnt how to make our own puff pastry and Christmas cookies along with learning how to properly ice our Christmas cakes, make mince pies, ice our cookies using the flooding technique and numerous things about pregnancies as two of the ladies on the course were pregnant and there was a great deal of chatting.
The following pictures are two of the finished Christmas cakes from the class. Neither of them are mine, but I really liked the ideas…
These techniques were then put to great use when I went home for Christmas, but it’s a lot harder when the cake is about 5 times the size and the temperature is about 5 degrees higher. The great thing about doing the ones at home was that we really just messed around and came up with some rather interesting decorations including a snowman that didn’t survive the heat and ended up on his side and a lovely choir of angels with a Big Mama choir mistress. Unfortunately these were quickly cut and eaten so I don’t have any photos.
A few weeks before heading home for Christmas I was asked to make a treasure chest cake for a 3 year-old’s cowboy theme birthday. I was up until 2 in the morning putting it all together and having super fun! I didn’t get a decent photo of it, but I also made 30 or so Sheriff badge cookies using the recently learnt flooding technique. This was also loads of fun and our kitchen looked insane by the end of it – covered in chocolate, icing, sweets and me. I did get a picture of the cookies:

I was quite chuffed with the cookies and will definitely be doing something like this again as they are very effective. They can also be flavoured with vanilla, lemon, chocolate, cinnamon and nutmeg among others. The optioins are endless.
